polenta

POLENTA WITH SPINCH

1 10 oz. pkg. frozen chopped spinach
4 Tbsp. butter
1/3 cup cream
1/3 cup grated (fresh) parmesan
salt & pepper to taste
Drain water from spinach. Melt butter in skillet over
medium heat untill frothy. Add cream, spinach and cook,
stirringfrequently, 4-5 minutes. Stir in parmesan, salt
pepper to taste.
Meanwhile pan-fry 1/2" thick slices of polenta in skillet
with 1-2 tbsp. butter. fry on medium high turning
occaionaly until browning has occured (crispy).
Spoon spinach over fried polenta slices in individual
dishes and serve.
